Ember & Reserve opened on a quiet Tuesday in October 2019, with forty seats, twelve cocktails and a humidor still settling. It was meant to be small. It has stayed small on purpose.

What began as a love letter to the cocktail bars of Tokyo and the cigar lounges of Havana has become a room of its own character — a place where the lights are low, the music is just below conversation, and the door closes promptly at two.

Our list is short because we make it ourselves. Our cigars are kept in a room you can walk into. Our staff have, on average, twelve years behind a bar. None of these are accidents.
